1You know that the sun is the source of all energy on earth. But sometimes we get a double dose of that energy. Solar radiation reaches the earth. The earth soaks up some of it and reflects some back to the atmosphere. The reflected radiation is absorbed by the gases in the atmosphere. The gases act like the glass walls of a greenhouse. They trap the warm air in and reflect it back to earth again. Scientists call this the greenhouse effect.

2You may have heard that the greenhouse effect is a bad thing. But the truth is life could not exist on earth without it. Our planet would be cold. However, an increase in the greenhouse effect would make earth too hot. Many scientists think that this is happening now. There is an increase in carbon dioxide. This is causing an increase in the greenhouse effect. The earth is warming up.

3Temperatures around the earth have steadily gone up over the past 200 years. The past twenty years have seen the biggest increase. If this continues, it could have a shocking effect on the earth. People's lives could be changed in a negative way.

4Most scientists agree that global warming is happening. What they disagree on, though, is what is causing it. The greenhouse effect happens naturally. There is proof that the climate of the earth has warmed up and cooled down in the past. But data show that the population is growing. So is the amount of carbon dioxide in the air. Are people causing global warming? If so, what effects will this have on the earth?

Kitchen Chemistry

1Inquiry is a wonderful word in science. It means investigating and learning about things on your own. If you want to do some inquiry into the science topic of matter, a really good place to start is in the kitchen. Kitchen chemistry is a great way to demonstrate chemical changes and the three phases of matter.

2There are lots and lots of things you could investigate in the kitchen, since cooking usually involves some chemical processes, but let's just look at these few: bread, red cabbage, hot fudge sundaes, popcorn, and oobleck.

3Cooking food often causes a chemical change. When a chemical change happens, the food cannot be changed back into what it originally was. So, making a salad is not a chemical change, because you can take a salad back apart, but baking bread is a chemical change, because you can't separate bread into its original ingredients. Baking bread is a chemical change that uses water, baking soda, and other ingredients that produce acid. Baking these ingredients releases carbon dioxide gas, which is what makes the bread rise.

4Not all chemical changes involve cooking or heating. Red cabbage juice is a good example, but you will need to cook a little first to get your materials ready. First, chop some red cabbage (it really looks purple) and cook it in boiling water for about 20 minutes to make red cabbage juice. This juice can now be used to test other substances to see if they are acids or bases. You could try testing lemon juice, clear soda, dishwashing liquid, vinegar, and other ingredients. Mix each one with some red cabbage juice. A chemical change may happen, and if it does, the color that results will tell you if you have an acid or a base. An acid should turn pink, and a base should turn green.
